Five Fandom Friday – Comfort Foods That Make Me Feel Better

Five Fandom FridaysIt’s Friday. That means another edition of Five Fandom Friday from geeky bloggers all over thanks to the genius of Super Space Chick and The Nerdy Girlie. Today’s topic: Comfort Foods That Always Make Me Feel Better. My choices are below.

Mashed Potatoes

Really, this could be potatoes of any kind. I’m a huge fan of any and all potato dishes. I often find myself feeling like Bubba in Forrest Gump when he talks about all the different ways you can use shrimp.  Mashed Potatoes, French Fries, Scalloped Potatoes, Baked Potatoes, etc…

Cowboy Cookies (baked by my dad)

These are like chocolate chip cookies but with oatmeal and peanut butter and cinnamon and he usually adds M&Ms to them too. I have no idea how he makes them, but they are amazing and I’ve never been able to make them quite like he does.  One of these day’s I’ll recreate his masterpiece, but until then I just call him whining that I need magic cookies.

Cheesy Baked Pasta with Spinach & Artichokes

Real Simple is an amazing magazine for many reasons, including the recipes. This dish is one of the many I’ve found and loved. This is essentially a grown up macaroni and cheese.  As such, it’s perfect when you’re not feeling well and need some comfort food but don’t want to feel bad about it afterwards.

Broccoli and Cheddar Quiche

I’ve never liked quiche until I tried this one. And now its the perfect food when you don’t really want food and aren’t feeling so hot. Its got your carbs (its a brown rice crust!!), your veggies (broccoli), your protein (eggs), and some yummy cheese to round it all out.  Its a meal perfect for any time of the day. And you can thank pinterest for this fabulousness. Pinning all those recipes results in something memorable every once in awhile…

Dad’s Stew

As you can see, I’m extremely lucky to have grown up with parents who loved to cook and bake.  In the winter, my dad makes an incredible beef stew.  I have no idea what he puts in it and I don’t even think he’s consistent with what he puts in it.  But it always turns out amazing and hearty. You’ve got to have soups when you’re not well.
